Great for New Year’s Eve!
This is a flavorful surprise to serve at the end of a celebration dinner, or to cleanse the pallet after a heavy dinner.
Strawberry Soup
Ingredients should be cold and fresh from the fridge before proceeding
3 cups strawberries, hulls removed, cut in half
1 cup champagne ( your favorite variety, I use brut or extra dry)
1/3 cups sugar
1 cup fresh orange juice
Juice of 1 lemon
1. In a blender, add the strawberries, champagne, ½ sugar, and ½ orange juice and pulse until slightly chunky. Taste. Adjust consistency with remaining sugar, orange juice and lemon. Stir to combine and refrigerate
2. Chill in the refrigerator until ready to serve.
Champagne ice
6 cups of champagne (your favorite variety, I use brut or extra dry)
12 TBS sugar
Juice of 2 lemons
2/3 cups honey
1. Combine all ingredient until sugar is dissolved and freeze in flat tray until frozen. The Champagne will keep it from freezing solid.
2. Shave the sorbet with a spoon into 1 tablespoon rounds.
To Serve: Spoon the soup into serving bowl, top with a rounded spoonful of the Sorbet and garnish with any of the below.
